Abstract
Roasted plantain(boli) is a delicacy in Nigeria. The convectional method of processing this food is crude, stressful and unhygienic. The need to upgrade the local roasting process to be more user friendly, efficient and versatile is the basis of the development of an affordable multi-heat source plantain roaster. the machine was evaluated using plantain to produce Boli.
