dc.description.abstractUnderutilized grain, Acha starch was isolated and modified by cross-linking, oxidation, and acid treatment physicochemical properties of the native starch and modified derivatives. The physicochemical properties of chemically modified samples were altered. The solubility, water and oil absorption capacities, bulk density, foam capacity and pasting viscosities decreased upon modification.
